Some persona who have heretofore tested the Bweeldhed composition whioh has been offeied them by old ladiea, ander the name of blaokberry, will perhaps amile at thia sag- geatioSi,: bnt if they irlll take the trouble to xaake:an experiment or tw:o in the maimer I am aboat to relate, thoj* will flnd that wine oan bb made &om blaokberriea; aud that while we hare been searohing ail over the world for giapea that cao be naturalized, with the view to sapply onraelres with that very derirable beverage, a fruit whioh grows plen¬ tifully at oni own doors, and whioh is admira¬ bly adapted for that purpose, had been entire¬ ly overlooked.
When the berries are ripe they shoald be rubbed between the handa or with a wooden masher in. aome suitable vessel, antil the oeliB oontaioing tbe jalce are thoroughlj broken. They ahoald then be plaoed in a tab—one that is deep and not of very great diameter is probably the moat suitable—aud to eaoh gallon of berries add from one to two pounds of augar, after mixing the berries aud angar, add for each gallon of berries one quart of boiling water. They ahould be kept In the tab about twenty fonr hours. The heat imparted by the boiling water will cause a fermenting proceas to start immediatelj, withoat lhe asaistaace of^eadt or any other ingredient. I had some other wiue, made iu tbe ijame way, but with a less quantity of sugar, wbicb strongly resembled claret; but was much better thau any ofthe ordiuary French olarel to be obtained iu tbis conntry. I thiuk it very probable tbat by varying the process— aud adding more or less boiliug water, aud permitting the fermentation to progress for a longer or shorter period—wiu^ of various qoalities may be ubtaiued.
From eaoh gallon of benies treated iu the above way, about one gallou of wiue is ub tained. The costof gathering the berries will not average more thau teu ceuts,audthecust of the sugar will be frum eight to sixteen eeuta, accordiug to the qnality used. Uere then h wiue tbat will u.»t cost more tbau twenty-five cent:- to iiie galluu, aud iu lbe country where tbe cbildrdu will pick must uf the berries, the real outlay will not be mure than frum eight to sixteen couts. Wbat, then, is to preveut tbe farmers fruiu having their owu table wine, aud plenty of it t Tliac the juice of the blackberry coutaius all th^ essential retjuisites for making a good wiu^*, is absolutely certaiu. It is gravely proposed, in one of onr ex¬ ohanges, to use weeds for enriching land!— The writer claims that they keep the land moist, by condensing dew and conveying it down to roots of the plants, and by keeping the gronnd shaded. Wben Ihey attain cou¬ siderable aize, the farmer ¦plows them under, jnst as he does clover crops.
At firat, we thoaght this writer mnst he some lazy wag, but on studying him closer, we.aro Batisfled that he ia a grand reformer iu agrioalture. " Why shonld the weeds be wasted," be asks, " and time and labor lost in trying to extirpate them, when thuy are evi¬ dently designed to grow and to he made ase¬ fnl "? Now, it may be making the best of a bad bargain to plow nnder a heavy growth of weeds whicli hare onco got the start of ns bat to grow a crop, of tbem " on purpose " to uae them in this way, is bad policy. 0o they not Qzhaost land of tertility wliich should go to the growing crop ? And is there not great danger that if weeds are aUowed to get nnder fall headway, they will prove too mnch for the farmer to subdue ? If they go to seed, what a crop of mischief do they make! White daisy, thistles native and foreign, docks and the rest, are dangeroaa things to trille with. Manare made in this way, will probably cost too much.
