Every farmer's family is engaged in dairying to some extent, and with all, there is a degree of familiarity with the details of dairy management. Every one therefore has made a beginning, and needs only to extend and enlarge his operations. That increase of dairy products to an unlimited extent can be made profitable under skillful management would appear from the price of even common butter and the very large price of that which is really good. The late Julian Legrjnd, a famous Farii merchant, was fond of telling the following incident of his mercantile life, and he never closed the narration but with swimming eyes : During the financial crisis and crash of fifly-seven, when great men were sinking all around us and banks were tottering, oar bouse became alarmed at the condition of its own affairs. The partners—three of us, of whom I was the senior— met in our private office for consultation. Our junior made careful inventory of everything— of bills received and payable—and bis report was that twenty thousand jwunds (speaking in English currency) of ready money, to be held through the preesure, would save us. Without that we must go by the board ; the result was inevitable. I went among my friends, but in vain. The money we needed was not to be had. According to the estimates of Prof. Houghton, three hours of hard study produce more important changes of tissue than a whole day of tnu9cular labor. An important point of dairy economy is the feeding of the cows at regular intervals. If the usual time for the feed be allowed to pass, the animals are almost certain to become very uneasy—to icorry ; and every feeder knows, or ought to know, that a fretting beast will neither fatten nor yield milk satisfactorily. The cowhouse ought to be kept as clean as possible; and the excreta, therefore, should be removed every day. The importance of roots for the Winter and Spring feeding of dairy stock is not generally appreciated. They serve a purpose beyond their nutritive value as compared with other kinds of food. In connection with dry food like hsv, straw, and the like, they act as a corrector giving tone to the appetite and promoting health. It is an essential point in the management of milch cows to keep them in vigorous health; for, if tbey are suffered to get in a low condition, it is vain to expect either a good return of milk or that the milk yielded should be ot a superior quality. Youatt very truly remarks that if cows are lean when calviug, no subsequent management can bring them t« yield, for that season, the quantity of milk tbey would have furnished had they been kept in good condition. "When the animals are fed on straw, or coarse, poor hay only, without anv green food, until toward the time ofcalving, the vessels secreting the milk becomecomparatively inert and powerless, and will not afterward yield either much nutriment, or this of good quality ; it is, therefore, important that milch cows should be maintained at all times, not only in good condition., but what maybe termed a milking habit, wbiob can only be accomplished by a moderate supply of any of the succulent feeding roots in addition to good dry food." Dairymen find it to their advantage to turn out their stock during tbe night. Hay that has been cut and collected in a dry summer, yields a milk richer in butter than hay cut in a wet season. Too much attention cannot be given to this department, and we should most earnestly recommend all to keep an accurate account of the food iurnisheii to their cattle and the increase oi milk and butter derived from such feeding, as well as the effeet upon the quantity of both, and thus by comparing their notes at tbe end of tbe year, through the public journals, much valuable information would in a few years be obtained. Every farmer's family is engaged in dairying to some extent, and with all, there is a degree of familiarity with the details of dairy management. Every one therefore has made a beginning, and needs only to extend and enlarge his operations. That increase of dairy products to an unlimited extent can be made profitable under skillful management would appear from the price of even common butter and the very large price of that which is really good. The late Julian Legrjnd, a famous Farii merchant, was fond of telling the following incident of his mercantile life, and he never closed the narration but with swimming eyes : During the financial crisis and crash of fifly-seven, when great men were sinking all around us and banks were tottering, oar bouse became alarmed at the condition of its own affairs. The partners—three of us, of whom I was the senior— met in our private office for consultation. Our junior made careful inventory of everything— of bills received and payable—and bis report was that twenty thousand jwunds (speaking in English currency) of ready money, to be held through the preesure, would save us. Without that we must go by the board ; the result was inevitable. I went among my friends, but in vain. The money we needed was not to be had. Men who held gold would not let it go, saveupon solid security, and the only security we could give was our word and our honor, for the many thouaands due us were as nothing in that hour. p -S. Missing the deepest channel, they had grounded, and held on for years and years, until they had been gradually reduced by melting, and by pieces breaking from them but never yet were small enough to tide over the rocky bottom and reach the sea outside. The importance of roots for the Winter and Spring feeding of dairy stock is not generally appreciated. They serve a purpose beyond their nutritive value as compared with other kinds of food. In connection with dry food like hsv, straw, and the like, they act as a corrector giving tone to the appetite and promoting health. It is an essential point in the management of milch cows to keep them in vigorous health; for, if tbey are suffered to get in a low condition, it is vain to expect either a good return of milk or that the milk yielded should be ot a superior quality. Youatt very truly remarks that if cows are lean when calviug, no subsequent management can bring them t« yield, for that season, the quantity of milk tbey would have furnished had they been kept in good condition. "When the animals are fed on straw, or coarse, poor hay only, without anv green food, until toward the time ofcalving, the vessels secreting the milk becomecomparatively inert and powerless, and will not afterward yield either much nutriment, or this of good quality ; it is, therefore, important that milch cows should be maintained at all times, not only in good condition., but what maybe termed a milking habit, wbiob can only be accomplished by a moderate supply of any of the succulent feeding roots in addition to good dry food." Dairymen find it to their advantage to turn out their stock during tbe night. Hay that has been cut and collected in a dry summer, yields a milk richer in butter than hay cut in a wet season. Too much attention cannot be given to this department, and we should most earnestly recommend all to keep an accurate account of the food iurnisheii to their cattle and the increase oi milk and butter derived from such feeding, as well as the effeet upon the quantity of both, and thus by comparing their notes at tbe end of tbe year, through the public journals, much valuable information would in a few years be obtained.
