Amid the Excitement of the moment many incidents, some of them of a very serious character, and others more calculated to provoke laughter than tears occurred. Some of these incidents have been hurriedly gathered together, and we present tliem as"they come to hand. great racks, containing some two thousand tons of iron, were badly sprung, and the bars thrown putward and eastward very perceptibly. Ponderous stacks Cjf iron bars, in various portions of the store, were thrown down and floored togethef in admirable confusion, Boxos of nails, piled up at the head of the stairs, were pitched down as if they had been so many wooden toys. The furiousness of the shock was everywhere apparent among the mass of weighty matter, which ono would have thought, before this disaster, immovable. Biros' New.—There ia one luxury In the matter of foo£l which haa not* yet been introduced into tliifl'country, excepting on the Pacific coast, but in the growing fancy for rare and foreign productions Which prevails among us. and especially when extravagance in orery department of living seems to be the ruling principal with so many, we should not be surprised at the early introduction of birds' nests as an article of diet. It Will perhaps hasten, instead of deferring their introduction, when the enormous price of this delicacy bccooies known. There ia a large class'of persons, not the most sensible class of course, who value everything in proportion to the price that is | put upon it Such persons would be delighted I to know that birds' nests never become an article of food with the vulgar, inasmuch as "they cost at retail in Cfyina, the principal mark- ] ot for them, not less than' twentyflve or thirty dollars a pound, and sometimes more than j this. A dish of birds' nest soup, therefore, could only be indulged in by those who would pay (or a dish of strawberries out of season at the rate of fifty cents a berry, Although the taste for this expensive article is cor&nded almost exclusively to the Chinese, it is not a production of China, as is generally supposed, but of the Indian islands, and is principally found in Java, fn caverns tliat are most frequently situated on th6 sea-coast The nesis are made by a species of swallow peculiar to those islands, known in natural history as hirundo escvlenta. They are made in the same form as the nests of other swallows, but instead of mud ihey are made of a glutinous substance, strongly resembling isinglass in appearance and in texture. AVhat the substance is does not seem to have been fully asocrtained, some maintaining Ibaf it is composed of sea foam or other marine products, while others suppose that it is exuded from the muuth of the bird and is the product of ft* own food which has wholly or partially digested. The nests are not obtained without considerable labor. Being usually found in deep caves along the coasts, they are often inaccessible excepting by the use of ladders from below or above. The most remarkable and productive caves are situated on the south side of the island of Java,and are only to be approached by a perpendicular descent of many hundred feet by ladders made of bamboo and ratan overhanging the sea; which dashes itself violently against the shores in which the caves are found. The caverns are so dark that they must be entered with torches; and great care is required to prevent a precipitate passage into the faging jsurf below. There are different qualities of the nests. The best are those which have not been occupied by the birds, being only just completed. They are quite clean and whiie,' and in this state Are like massed of pure isinglass. Those which have been used by the birds for laying their eggs and hatching and rearing their young are of course impure, and do not bring so high a price in the ' market. The nests require no preparation excepting that of drying, after which they arc assorted into firtt, second, and third qualities, packed in boxes and taken to China, the only country affording a market for them. The Japanese havo no taslte for the article, and even in Java, where they are chiefly produced, they are not held in any estimation for domestic consumption. So highly are they esteetrfed in China, mat at Canton the common price is said to be $3,500 the plcul, or about $30 a pound. The second quality brings about $20 a pound and the third $10 or $12. ' They are consumed only by the wealthy, and the finest of monopolized by the court. A great repugnance is often expressed against their use by those who have never sejn tile article, but it closely resembles in appearance aHii in substance many articles of common consumption in this country, and if all could see, as we have had occasion to, the origin and the manufacture of some of those, articles, we presume they would have much more charity for their Chinese cousins. It is a very old maxim, too, De gustibut nil dit'pufand'um, and although it is said to have originated with a certain old lady who had a fancy to kiss her cow, it has received the indorsement of all the world. Even when we are mctat ready to condemn others for fancying and eating what they like, we nevertheless claim the privilege of being governed in our practice by our own tastes. Workmen were busy replacing the roof dt the old California Exchange, corncr of Kcamy and Clay, now (he Melodeon building, but, notwithstanding the fact that its width is sixty two feet, no damage occurred. This is accounted for from the fact that its walls arc laid in cement. Extremely sensitive and nervous people thought they felt a succession of shocks, between half-past nine and ten o'clock last eve ning; but we suspect they were purely imaginary. As the last stroke of ten was sounded by the bel!s the earth gave a slight shiver,, as if settling down for the night. . Amid the Excitement of the moment many incidents, some of them of a very serious character, and others more calculated to provoke laughter than tears occurred. It Will perhaps hasten, instead of deferring their introduction, when the enormous price of this delicacy bccooies known. There ia a large class'of persons, not the most sensible class of course, who value everything in proportion to the price that is | put upon it Such persons would be delighted I to know that birds' nests never become an article of food with the vulgar, inasmuch as "they cost at retail in Cfyina, the principal mark- ] ot for them, not less than' twentyflve or thirty dollars a pound, and sometimes more than j this. A dish of birds' nest soup, therefore, could only be indulged in by those who would pay (or a dish of strawberries out of season at the rate of fifty cents a berry, Although the taste for this expensive article is cor&nded almost exclusively to the Chinese, it is not a production of China, as is generally supposed, but of the Indian islands, and is principally found in Java, fn caverns tliat are most frequently situated on th6 sea-coast The nesis are made by a species of swallow peculiar to those islands, known in natural history as hirundo escvlenta. They are made in the same form as the nests of other swallows, but instead of mud ihey are made of a glutinous substance, strongly resembling isinglass in appearance and in texture. AVhat the substance is does not seem to have been fully asocrtained, some maintaining Ibaf it is composed of sea foam or other marine products, while others suppose that it is exuded from the muuth of the bird and is the product of ft* own food which has wholly or partially digested. The nests are not obtained without considerable labor. Being usually found in deep caves along the coasts, they are often inaccessible excepting by the use of ladders from below or above. The most remarkable and productive caves are situated on the south side of the island of Java,and are only to be approached by a perpendicular descent of many hundred feet by ladders made of bamboo and ratan overhanging the sea; which dashes itself violently against the shores in which the caves are found. The caverns are so dark that they must be entered with torches; and great care is required to prevent a precipitate passage into the faging jsurf below. There are different qualities of the nests. The best are those which have not been occupied by the birds, being only just completed. They are quite clean and whiie,' and in this state Are like massed of pure isinglass. Those which have been used by the birds for laying their eggs and hatching and rearing their young are of course impure, and do not bring so high a price in the ' market. The nests require no preparation excepting that of drying, after which they arc assorted into firtt, second, and third qualities, packed in boxes and taken to China, the only country affording a market for them. The Japanese havo no taslte for the article, and even in Java, where they are chiefly produced, they are not held in any estimation for domestic consumption. So highly are they esteetrfed in China, mat at Canton the common price is said to be $3,500 the plcul, or about $30 a pound. The second quality brings about $20 a pound and the third $10 or $12. ' They are consumed only by the wealthy, and the finest of monopolized by the court. A great repugnance is often expressed against their use by those who have never sejn tile article, but it closely resembles in appearance aHii in substance many articles of common consumption in this country, and if all could see, as we have had occasion to, the origin and the manufacture of some of those, articles, we presume they would have much more charity for their Chinese cousins. It is a very old maxim, too, De gustibut nil dit'pufand'um, and although it is said to have originated with a certain old lady who had a fancy to kiss her cow, it has received the indorsement of all the world. Even when we are mctat ready to condemn others for fancying and eating what they like, we nevertheless claim the privilege of being governed in our practice by our own tastes.
